A very fragrant, intense wine. On the nose, aromas of lemon/lime, cider apple, , struck match and spice . A depth of fruit abounds which builds together with a vibrant, chalky, acidity. There is a linear drive with a refreshing dry finish.

Fruit from our near 40 year old vines underwent fermentation utilising indigenous yeasts ( wild ) in barrel ( 25% new French oak ) and then undergoing a 50% malolactic fermentation. Matured for ten months in barrel on fermentation lees with monthly battonage, then incorporated into stainless steel tank for two months prior to bottling.

No fining and single filtration.
