A very fragrant, intense wine. On the nose, aromas of lemon/lime, grapefruit, cider apple, struck match and spice . A depth of fruit abounds which builds together with a vibrant, chalky, acidity. There is a linear drive with a refreshing dry finish.

Hand picked fruit from our near 40 year old vines , gently whole bunch pressed before natural fermentation ( wild/indigenous ) in barrel ( 25% Taransaud French oak barriques) and then undergoing a 50% malolactic fermentation. Battonage monthly with ageing for ten months in barrel on fermentation lees , then incorporated into stainless steel tank for two months on fine lees prior to bottling.A small amount of sulphur added to the wine ( anti-oxidant )
No fining and single filtration.
